Hehe, Chu Chu Rocket wasn't the most fun game ever and wasn't really a skill-based game. It mainly excels at taking boozed up people that aren't usually very competitive and making them throw a tizzle.
The basic premise = you have a grid layout level (that slightly resembles pac-man) with 4 rocket ships (1 for each player). Mice come pouring out from all 4 corners and you place arrows down on the grid that stay there for a fixed amount of time (~10 seconds) that direct the mice. Your goal = get the most mice into your rocket for the time duration of the round.
Cats randomly enter the playing field as well as mice, and if the cat reaches your ship you lose a random number of mice from your ship. There's also chaos type of things that you can get that cause random boosts to occur such as increasing the # of mice that come out, speeding everything up, slowing things down, sending out a bunch of cats, etc.
The downside of this game is that it was only fun if playing with 4 players but it's hard to describe the insanity of those times.

Wow, that's a completely screwed-up game concept; rockets, mice, grids, arrows, and cats. I love it! How come I never heard about this before now?! Oh, right, Dreamcast... 
As for "taking boozed up people that aren't usually very competitive and making them throw a tizzle," what more can one ask from a four-player game? Knowing my friends, that sounds like a good night's entertainment. Maybe we can start a petition to get SEGA to release a version for the PS3.

[color:#330099]I never knew anyone who had a Magnavox Odyssey (1972) home console... The first pong variant I played I have yet to identify. All I remember was that I'm pretty sure it was in color and it had a handheld rotary controller box separate from the main box. Several years later I had the chance to play another pong box which I've presumed all these years was an Odyssey but now that I surf around a bit I'm nearly certain that it was the Coleco Telestar.

...playing defender on an old texas instruments system that one of my uncles had. If that was a TI-99\4A then I suspect that there's a fair chance that the game you played might have been Parsec since TI never seemed to bother licensing anything recognizable like Defender as far as I know. (Wikipedia does list Donkey Kong and Frogger but there's no supporting data and it would be the first I've heard of them on the TI). It was one of the most woefully un-fun games in their decidedly non-stellar lineup mostly because it was ridiculously hard.

I do hope to get a TG16 one of these days. It's awesome to hear someone say that. I still have my TurboGrafx around and it was an awesome machine in its day. I remember reading about the "PC Engine" for a couple of years before it came to the states and it was a worthy representative as the first 16-bit console to reach the States. Intellivision: Space Armada (most InTV games sucked) For what it's worth, Intellivision's rendition of Burgertime was far superior to the Atari version and, although I wasn't particularly a fan of the cartoon series, He Man: Masters of the Universe was actually an excellent game; one of the best that came out for the Intellivision IMHO.

I watched a couple yesterday hoping it would somewhat capture the essence of what it's like to play the game... but unfortunately it doesn't... it actually looks pretty boring to watch it on there but the actual playing experience gets quite intense. Dreamcast was a great system that was far ahead of its time. I went straight from SNES/Genesis to Dreamcast and didn't own a PS1, Saturn, or N64. It was rather sparse on RPG's though, but it did have Grandia II and Skies of Arcadia. Soul Caliber had a nearly perfect port as well. Were it not for the Zelda, Mario, and Metroid series, I'd skip the Wii altogether (as I did with the N64). I really dislike the Wii controllers, and I'm not all that crazy about the console's design, either. By contrast, the Game Cube is so cute, practically-designed, and well-built, and the controllers are great, especially the analog sticks. I'm just glad the Wii has GCN controller ports and card slots.
I almost bought one last year, and I still might break down and get the white one, but I've been holding out for a black one (as I did with the GCN). Hopefully the next release will also play regular CDs/DVDs, but as long as it's in black, I'll be happy. I hated the look of those old gray consoles from Nintendo and Sony (NES, SNES, PS1). Nintendo did a good job of offering the GCN and DS in multiple colors, but I wish they'd hurry up with the Wii. If you're going to have only one color, it should be black.
